gingerbread cake

I know I just did a dessert but this cake is so so simple and so so flavorful that I couldn't resist!
And what screams Christmas more than gingerbread cake??
Mmmmm.



Not much more to say than just look at that delicious picture!
Plus, it's Christmas Eve Eve Eve and we've got lots to do!

Gingerbread Cake
Serves about 30, 2" pieces
6 tablespoons unsalted butter, melted
3/4 cup lightly packed brown sugar
1/3 cup molasses
2 eggs
1 tablespoon grated fresh ginger (please put this in.  you might want to take the easy route and leave it out.  don't.)
1 3/4 cup flour
2 teaspoon ground ginger
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cloves
1 cup warm water

Preheat oven to 350*.
In large mixing bowl, whisk together butter, brown sugar, molasses, eggs and ginger root.  Set aside.


 

In a medium bowl, whisk the flour, ground ginger, baking powder, cinnamon, baking soda, salt
and cloves.


Add to the molasses mixture alternately with water, beating just until combined and pour into a greased 13" x 9" x 2" baking pan.  




Bake for 20-30 minutes or until a toothpick inserted near the center of the cake comes out clean.  Cool for 10 minutes before removing from pan to a wire rack to cool completely.  Frost with your favorite icing!  (I've used plain vanilla buttercream and cream cheese!)

  1. Katie, I made this cake for Christmas. I've been on a ginger kick as of late (trying to find/develop my favorite chewy ginger cookie), so this was a much welcomed addition to my craze. I'm not a huge pie person, so holiday desserts (at least in my family) leave me bummed for something different. It was a HUGE hit! Everyone loved it. I did a buttercream icing with cinnamon in it and topped it with some diced crystallized ginger. Thanks for sharing! Be Blessed, Rachael

    with or without the chocolate chips! But, I too, only like chewy gingersnaps and this one is my new favorite! Hope you enjoy!
    PS - that buttercream icing sounds awesome on this!! Good idea!
