easiest quiche eva.


Ready for some easy peasy quiche?!
This is great for brunch with the girls, baby showers, bridal showers, nights when your hubby is working late, after church breakfast-for-lunch, etc etc.
Very versatile so feel free to add your own ingredients or substitute something....whatever you'd like!
Broccoli, kale, mushrooms, peppers, the list goes on and on...
It's that easy.
Aaaaaand go!

Easiest Quiche
Makes one.
6-8 ounces bacon
3-5 eggs, depending on how big they are
2 cups whole milk cottage cheese
Salt and pepper and dry mustard (optional), to taste
One pre-baked pie crust, homemade (or, shhh! storebought!)
1-2 cups shredded sharp cheddar

Dice bacon into small-ish pieces and saute until golden.  Drain on paper towels and set aside to cool a bit.


Meanwhile, in a food processor or blender, combine eggs, cottage cheese, and seasonings.  Blend until thick and creamy.







Get your (cooled) baked pie crust.


Sprinkle bacon over the bottom, layer on the cheese, and pour on the egg custard.





Bake at 375* for 30-45 minutes until center is set and golden brown.


Let cool for about 5 minutes and enjoy!
