pumpkin pie french toast

Hey.
It does not need to be Halloween to have pumpkin stuff.
It can totally be the middle of November and you can whip these pumpkin pie french toast up for your kids.
Or yourself.



This french toast is super custard-y (spelling on that one?? ;)) and rich so you don't need too many pieces.
But, hey, I won't judge if you (or I) have four (or five!)!

Serve hot with butter and cane syrup!

Pumpkin Pie French Toast
Serves 4.
3/4 cup pumpkin puree
1/2 cup whole milk (I miiiiight have used half and half...)
3 eggs
1 teaspoon pumpkin pie spice
12 slices bread (any you prefer)
Butter and syrup

Melt a dab of butter in a large skillet over medium heat.
Whisk pumpkin, milk, eggs, and spice in a shallow dish, like a cake pan, until smooth and thick.
Dip each side of bread in the egg mixture and fry until golden brown, about 3 minutes.
Flip and brown other side.
Repeat until all slices of bread are used.
Serve immediately with butter and syrup and enjoy!
