watermelon-tomato feta salad

Watermelon in a salad? Trust me. Just trust me.

It has a nice, sweet and salty thing going on. Watermelon = sweet. Tomato = savory. Feta = salty. Red onion = crunchy.

I wanted some salad to go with grilled foods. Isn’t that the epitome of summer? Grilled foods and summer salads? Well, this hits the spot. It sounds strange putting watermelon in a savory salad but believe me, its great.

The sweetness even prepares you for dessert! Enjoy!

Watermelon-Tomato Feta Salad

This is a great salad to take to a BBQ as well. It can sit for hours at room temperature.

Serve with anything off the grill.

1 small seedless watermelon

2 large tomatoes, any color

4 ounces feta cheese

¼ large red onion or ½ small red onion

½ cup balsamic vinegar

3 tablespoons sugar

¼ cup good quality olive oil

Small handful of fresh basil leaves, thinly sliced

Prep and chop watermelon and tomatoes into large, bite size chunks. Put in large serving bowl.

Slice red onion very thin. Soak in ice water until ready to use. (This takes out the over powering oniony flavor and leaves behind a nice mild crunch.)

Meanwhile, bring balsamic vinegar and sugar to a boil in a small saucepan. Boil for 1-2 minutes until sugar dissolves and becomes syrupy. Turn off heat, leaving pan on burner.

Toss watermelon and tomato chunks with drained red onion, feta and balsamic vinegar. Add olive oil and salt to taste. Top with sliced basil and serve.
