GD cooking class – roasted red peppers

This is a how-to for easy roasted red bell peppers.

Roasted Red Peppers

As many red bell peppers as you need

Salt and pepper

Olive oil

Preheat your oven’s broiler or heat your grill to high.

Clean and wash your peppers and dry them. Put them on a baking sheet or directly on the grill. Drizzle a little olive oil and salt and pepper on top and roast.

In the oven:

About 20-30 minutes, turning once one side is black.

On the grill:

About 15 minutes, turning once one side is charred.

Remove from heat, and immediately put into a bowl and cover tightly with plastic wrap. This is to steam off the skins. Let sit on the counter for about 30 minutes or until completely cool.

Using your fingers, remove the skins from the flesh of the pepper. It should come right off.

Take out stem and scrape seeds out with a knife. It helps if you split the pepper open.

Use in dips, salads, or any way you’d like!!
