crisp oatmeal peanut butter cookies



Okay, okay.  I like chewy oatmeal cookies, right?  Who doesn't?
But, maybe you don't.  So, this is the recipe for you!
These are crispy oatmeal cookies.
Weird, right?  But very tasty.  Very light and almost hollow on the inside. 
You can make them with any flavor chip but I decided to go with peanut butter this time.  Add a little fleur de sel to the top and you have something special!

Crisp Oatmeal Peanut Butter Cookies
Makes about a dozen or so, depending on how much cookie dough you eat.
Adapted from Cook's Illustrated.
1 cup flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
14 tablespoons (1 3/4 sticks) butter, at room temperature
1 cup sugar
1/4 cup lightly packed brown sugar
1 egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats
1 cup peanut butter chips (or any flavor you'd like)
1/2 teaspoon fleur de sel (flaky sea salt)

Preheat your oven to 350*.
Whisk flour, baking powder, baking soda, and salt together in a medium bowl. 



Cream together butter and sugars in a large mixing bowl until light and fluffy.  Beat in egg and vanilla.



Add flour mixture and beat until just incorporated.  Stir in oatmeal and peanut butter chips.



Drop by spoonful onto cookie sheets and sprinkle with a flake or two of the fleur de sel.  Bake until golden brown, about 13-15 minutes.  Remove to cool.
