cinnamon oatmeal pancakes + berry sauce

Yes, people. 
Get over it.

Another pancake recipe.

But, I love pancakes.
And these might just be my new favorite pancakes.
They are definitely the little-baby-boy-that-is-residing-in-my-belly's pancakes of choice.
:)

And the berry sauce is super easy and a teensy bit healthier than drowning in a butter pecan sauce.
But, if your thing isn't berries, then that sauce is really good too ;)


Cinnamon Oatmeal Pancakes
Serves 4, with a few to snack on for later :)
1 cup old fashioned oats
1 cup all-purpose flour (I'm gonna try wheat the next time!)
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 cup, chopped walnuts
3/4 cup sour cream
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
1/2 stick butter, 1/4 cup, melted, plus additional for buttering skillet

Mix dry ingredients, the first 7, in a bowl. In a another bowl, mix the wet ingredients, the next 4. Whisk the wet ingredients into the dry until just combined. Stir in the melted butter.
Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side.  Serve with berry sauce and enjoy!!

Berry Sauce
Makes about 2 cups.

10 ounces frozen mixed berries, thawed
2-3 tablespoons sugar, to taste
The juice of one lemon

Combine in a small saucepan and simmer for about 5-10 minutes, until thickened and serve!
Can be used for a variety of desserts, breakfasts, or yogurts!
