pear salad with warm bacon dressing


I hate boring salads.
Have I already told you this??

But, I will eat them if:
a) there is fruit.
b) there is bacon.
c) there is fruit + something called bacon dressing.

Pear Salad with Warm Bacon Dressing
Serves 4.
8 slices of thick-sliced bacon, chopped
1 small red onion, diced
3 tablespoons red wine vinegar
1 teaspoon sugar
1 teaspoon Dijon mustard
8 ounces young spinach, washed and dried
1/2 cup dried cranberries
3/4 cup chopped walnuts or pecans, toasted
2 pears, thinly sliced, any variety you like

Fry bacon in a small frying pan until crisp.  Remove, leaving 3 tablespoons bacon drippings, and crumble.  Set aside.  Over medium heat, saute the red onion until golden brown and soft.  Reduce heat to low and whisk in vinegar, sugar, and mustard.  Add bacon back in and keep warm over low heat.  Season to taste with salt and pepper.
Meanwhile, divide spinach between four salad plates.
Sprinkle the cranberries and nuts evenly over each salad.
Fan out 1/2 a pear for each salad.
Pour over bacon dressing, while warm, and enjoy!

  1. Katie!!! This looks SO good! I love bacon, and feel when it is paired with greens it becomes healthier ;) Can't wait to try this!
