all you need are the ingredients in your favorite egg rolls, minus the fried dough.
i didn't think i'd love it (i love fried dough) but we ended up all loving it!
with fresh cabbage from our gardens, this has become a stand-by for us :)
Egg Roll Bowl
Serves 4-6.
2 tablespoons sesame oil (or canola)
1 large green cabbage, outer layers peeled back and shredded
3-4 carrots, peeled and shredded
3-4 green onions, diced, or 1 large onion, diced
1 pound bulk spicy sausage, cooked (optional)
4-6 eggs
Toasted almonds (or sesame seeds)
Sriracha
Soy sauce
Heat oil over medium heat in a large non-stick frying pan. Add cabbage, carrots, and onions and saute until wilted and starting to brown. Add sausage, if using, and heat through. Keep warm over low.
In a small frying pan, fry your eggs to your liking.
Pile up cabbage mixture on a plate, and top with an egg and almonds, sriracha, and soy sauce to taste.
