our whole30 experience!

this past month, we (mike, myself, my mom and dad) did a whole30!
it was all of our first time to try it and we made it!
we weren't looking to lose any weight (although my dad lost about five pounds) but the whole idea came about when i said i wanted to identify what was causing my tiredness.
all. day. long.
well, i can't say that i gained much energy (at all.) but i can say that we all feel fitter, more "regular" and in general, a bit healthier.
we eat pretty close to whole30 anyway but it was nice to find new ways to substitute veggies for grains and legumes!
it was fun!
we are now in the re-introduction stage so stay tuned :)
enjoy our foodie pictures below!

we kicked it off with a classic whole30...egg muffins!

with compliant salsa verde!

roast chicken, green beans, and braised cabbage

"cream" of cauliflower soup...compliant!
venison chili with butternut squash!
sooooo good

and leftover chili for breakfast with fried eggs, pepitas, and salsa!

tomato soup and salad!

BACON!

a delicious snack! sliced apples, almond butter, chia, flax, and coconut flakes!

baked sweet potatoes with pork carnitas and fresh jalapenos!

sweet potato and kale nests with eggs

lunch out! chipotle has great whole30 options!

our boys love salad options.
they must pick at least 5 toppings :)
(yes, some items here are non-compliant...but those were for the boys!)

buffalo chicken salad over sweet potato mash for us...reg chicken salad plus toast and banana for the little ones

and always saving those ends and insides for homemade stock!

banana with almond butter, chia, and coconut flakes!

deviled eggs for a crowd :)
(compliant, homemade mayo)

mmmm tuna carrot salad with cantaloupe!

how we felt halfway through.
please just let me a stuff a roll in my mouth.
:)

a treat!
homemade kombucha and la croix!

roasted cauliflower salad

i love dates for a snack :)

n'oatmeal!
ground nuts, chia, and flax and soaked overnight with almond milk.

delicious!
you can't see the almond butter underneath

pumpkin breakfast custard with walnuts, pepitas, and cacao nibs!

barbacoa stuffed bells and mexican cauli rice!

bulletproof during a work call!

zucchini egg scramble plus sauteed kale and onions

but kinda craving the boys' oatmeal that day...

first time making zoodles!

with homemade marinara, venison meatballs, and nutritional yeast

roasted pork loin with Brussels and apple beet salad

egg roll bowl with a fried egg on top!

our first (and only) attempt at sweet potato toast.
not for us.

venison taco bowls with avo and plantain chips!

doterra greens smoothie and a "strong mommy picture" by jack :)

more pumpkin custard!
cauliflower rice stir fry with shrimp!

leftovers with eggs and nutritional yeast for breakfast the next day!

baked egg in sweet potatoes and avo

buffalo chicken salad over baked sweet potatoes plus avo and green beans

"mash apple" which is a sauteed cinnamon apple and coconut milk thing that totally tasted like apple cobbler and not breakfast, as it advertised...

baked eggs in avo! plus a greens smoothie

sauteed cinnamon apples over n'oats with cacao nibs!

banana egg pancakes plus sausage for mike's birthday breakfast!

and beef and broccoli stirfry for his birthday dessert!

i love, love my afternoon turmeric tea with coconut milk :)

and a big thing to remember, at least for me.
take a bit of time for yourself, during baby's nap or whenever, to relax, unwind, do some yoga, and just breathe!
