apple fennel grapefruit salad

Ready to get in shape for swimsuit season??
Ya, me neither.

But, this will help with minimal effort.
That's the kind of workout that I like :)

Apple Fennel Grapefruit Salad
Serves 2.
1 fennel bulb
1 Granny Smith apple
1 ruby red grapefruit
Olive oil
Kosher salt and freshly ground black pepper

Chop off the green ends of the fennel, leaving only the bulb.

Remove the tough, outer layers of the bulb, leaving the tender insides.

Remove the tough core.

Slice thinly and put in a medium bowl.

Quarter the apple.

Remove the core.

Slice thinly and add to the bowl.

Supreme the grapefruit into the bowl.

Squeeze the "skeleton" of the grapefruit into the bowl.

Add a drizzle of olive oil and salt and pepper to taste.

Serve up and enjoy!!

  2. wow this looks surprisingly delicious. my swim suit and I are not ready to be friends just yet, so this will definitely help!

  3. Ramsey, yes! You can be my personal fashionista and I'll cook! :) How'd you find me? Because I'm totally going through your blog now and looking at your cute outfits. I know, I'm a creep.
And Christine, I don't even want to think about swimsuits yet :/ Eeeek!

  4. Thanks for posting the mini fennel tutorial! I just found a recipe that calls for fennel but had no idea what to do with it. Now to actually find fennel as the commissary...haha!

  5. Of course! And our commissary actually has fennel quite regularly....shocking, I know! :)

  6. This does look really good Katie. We're heading to the farmer's market this morning and if they have fresh fennel, you can bet this will be on the menu for dinner tonite!

  7. This looks light, fresh and yummy!

  8. Very light and refreshing, if it would ever warm up :)
