roasted garlic lemon hummus


My new favorite hummus.
Hands down.
No need to say more.
Go try it.
Seriously.

Roasted Garlic Lemon Hummus
Makes about 3 cups.
2 cans chickpeas, drained and rinsed
1/2 cup water
1/4 cup tahini
1/2 cup fresh lemon juice
1 lemon, zested
2-3 tablespoons olive oil
1 whole head garlic, roasted
1 1/2 teaspoons ground cumin
Salt and freshly ground black pepper
Pita bread, to serve

In a food processor, blend all ingredients until very very smooth.  Transfer hummus to medium bowl. Cover and chill until ready to serve. Bring to room temperature before serving. Accompany with warm pita or pita chips. Enjoy!

  2. Katie, Katie, Katie...I would just like to say that I LOVE your blog! I have a can of chickpeas staring at me every time I open the pantry but have been too lazy to look up a hummus recipe. This sounds perfect! One question: what is tahini?

    Ok, tahini is sesame seed paste. I have found it at both commissaries that we've lived by. And at Walmart in East Texas :) It'll probably be on the international aisle or "gourmet" aisle. Honestly, you need it for authentic hummus but secret! I've made it without...don't tell!
    And roasted garlic: Take a whole head and cut it in half, hamburger-wise. Drizzle with olive oil, and season with salt and pepper and wrap in a double layer of foil. Roast in a 400* oven for about 30 minutes, or until super super soft and golden and caramel-y. Let cool. And you know you've done it right if you can squeeze out the cloves like butter. This changes the flavor and will change your mind on garlic FOREVER. Seriously. I spread it like butter on french bread for garlic toast. It's super sweet and buttery and you'll find yourself always doing it. In mashed potatoes, it's superb. I can't believe I've never done a post of this so I'll get right on that :) Hope this helps!

  9. Katie, so I have a few things to admit: (1) I follow your blog religiously and try out things here and there and (2) I now love hummus. I use to hate it, but my boyfriend has been working on breaking me in. I tried this recipe, but had to add more garlic as I'm a fiend.

    I have a strange request: can you try to recreate Pita Pal's Roasted Red Pepper Hummus? http://www.pitapal.com/products/roastedredpepper.html It's a bit spicy and incredibly smooth! I bought it at Costco, and we gobbled up both containers in a week. I'd love to be able to make it at home.

  10. Sure! My husband is about to deploy so I'll have a lot of time of my hands. I've made a roasted red pepper hummus before but I'll have to buy this one and try to replicate it. Thanks for keeping up with it...I love this little blog even though I don't have many followers :)
