grilled peaches with ricotta and balsamic reduction

This is easy and super fast. And you can do almost all the prep work in advance. Just throw the peaches on the grill and serve! It would be great with homemade ice cream too!



Grilled Peaches with Ricotta and Balsamic Reduction

Serves 2.

You could also do this with grilled pineapple or fresh cantelope!

2 peaches

Canola oil, for drizzling

½ cup ricotta cheese

5 tablespoons sugar, divided

2 tablespoons half and half

½ cup plain yogurt

½ teaspoon vanilla

½ cup good quality balsamic vinegar


Cut peaches in half and remove pits. Brush with canola oil and set aside.



Combine ricotta cheese, 3 tablespoons sugar, and the half and half in a food processor or blender. Process until very smooth, about 3 minutes, scraping down the sides as you go.

Combine ricotta mixture with yogurt and add vanilla. Whisk until smooth.



Meanwhile, combine balsamic vinegar and remaining 2 tablespoons sugar in a small saucepan. Bring to a boil and reduce to a simmer until sugar is dissolved and syrup reduces by half. Set aside.

Grill peach halves on high heat for about 2-3 minutes per side.



Remove to a serving bowl and top with ricotta sauce and balsamic reduction. Enjoy!
