key lime pie

My dad's favorite pie of all time is key lime pie.
So, I've been making it for quite awhile.

Now, there are, I'm sure very gourmet recipes out there for key lime pie. 
This one, however, is my childhood recipe.
Bought graham cracker crust + filling + whipped cream topping = easy crowd pleaser.

Or father-pleaser :)

Key Lime Pie
Serves 8, but really my dad eats about a quarter of it when I serve it, a quarter later that night and about a third the next morning for breakfast....

14 ounces condensed milk
4 egg yolks
3-4 ounces key lime juice, freshly squeezed is really best but bought will work as well
1 graham cracker pie crust, bought or homemade
1 container Cool Whip, but homemade whipped cream is super easy and tastes better

Preheat your oven to 350*.
In a large mixing bowl, beat the condensed milk and the egg yolks together until smooth.  Add the key lime juice and beat (carefully, it will splatter!) until smooth. 
Pour into pie shell and bake for 12-15 minutes.  Remove and cool completely.
Top with whipped cream and refrigerate until cold.
Enjoy!!

  1. This was my Dad's favorite desert, as well, until he became Diabetic. Now I eat Key Lime Pie yogurt and think of him :)
