red velvet banana bread with chocolate chips and white chocolate glaze. and sprinkles. :)

i love, love holiday baking.
nothing screams sweet, decorated treats like the Christmas season!
i saw these fun little loaves somewhere online (pinterest, i'm sure...) and had to try them!
i tweaked the recipe a bit and gave them as gifts.
i hope you enjoy!



Red Velvet Banana Bread with Chocolate Chips and White Chocolate Glaze
Makes 2 regular loaves or double the recipe and make 5 minis.
Adapted from online.
3 large eggs
1/3 cup canola oil
3 ripe, mashed bananas
1 red velvet cake mix
1/2 package mini, semi-sweet chocolate chips
1/2 package white chocolate chips
red and green sprinkles

Preheat your oven to 350*. Line 2 regular loaf pans with parchment and spray with cooking spray. Set aside.
Mix first three ingredients until well blended and then add in cake mix and beat until smooth with an electric mixer. Fold in mini chocolate chips and pour into loaf pans.
Bake until a toothpick comes out cleanly, about 40 minutes. Let cool.
Place white chocolate chips in a heat-safe bowl and microwave on high in 15 second intervals until smooth and melted. Pour into a ziplock bag and seal. Snip a small corner off and drizzle onto bread. Sprinkle the sprinkles on and let cool.
