sushi class with ms. margot!

So, my husband loves loves loves sushi.
And being a part-Italian, Texas girl, I know next to nothing about sushi making.
But, as I love him more than life, I decided to learn.

And it just so happens that when Michael and I were in Texas for the last deployment, a dear family friend that attends our church offered to teach us!
Well, me.  Michael mostly ran around, eating sushi rice out of the bowl and playing with her dogs.


This is Ms. Margot.
Isn't she great?!
She's really the best in the world.  I grew up with her and her family at church and dearly love her!
And now Mike will dearly love her too :)

red quinoa and avocado salad


So, I really have a bit of a love affair with quinoa.
Red, white, doesn't matter.
This is only the third recipe that I've posted on quinoa, but never fear!  I have more a'coming :)
And yes, this one is still my all time favorite, but the recipe below is actually a really really close second.
Maybe it's just the avocados.....I put avocados in anything and love it.
But, the scallions are absolutely necessary to this dish....and the avocados....and the crunch of the almonds.  Just do it exactly, okay?

Red Quinoa and Avocado Salad
serves 6, as a side dish
3 cups homemade or store-bought vegetable stock
2 cups uncooked quinoa, red or regular
6 scallions, sliced thinly
1/3 cup vegetable oil
2 tablespoons soy sauce
1/2 cup fresh squeezed lime juice, from about 2 limes
1 tablespoon honey
1/2 cup sliced or slivered almonds, toasted
avocados, diced 

Bring stock to a boil in a large pot with a tight-fitting lid.  Meanwhile, toast quinoa in a large, dry saute pan over medium-high heat, stirring constantly. When quinoa starts to smell toasted and nutty, about 5 minutes, remove from heat.  Pour quinoa into boiling broth, reduce heat to a simmer.  Cover and allow to simmer for 15 minutes.  Remove from heat and allow to rest, covered, for 5 minutes more.  Fluff with a fork and add scallions, stirring to combine.
Whisk together vegetable oil, soy sauce, lime juice and honey in a small bowl.  Pour dressing over quinoa, tossing to coat.  Just before serving, add almonds and avocado, and stir to combine.  Serve immediately or refrigerate and serve chilled.  Enjoy!

What more could you possibly want than Oreo stuffed chocolate chip cookies?

Oreo Stuffed Chocolate Chip Cookies
Makes about 12-15 giant cookies.

12-15 Oreos

Preheat your oven to 350*.

Bake for 12-15 minutes and enjoy warm!

fruit salad yogurt

Meh.
I have nothing to say about this.
It's delicious and makes a fruit salad extra special.
But, let's face it.
It is just flavored yogurt on top of fruit.
Tasty, but a bit boring.
I'll try harder next time ;)

Fruit Salad Yogurt
Makes about a cup.
1 cup Greek yogurt
1/2 teaspoon vanilla
1-2 tablespoons honey (depending on how sweet you like it)
1/2 teaspoon cinnamon

Mix mix mix!





Dollop on top of mixed fruit and sprinkle with toasted, sliced almonds and enjoy!

chickpea and wild rice salad

I know, I know.
I'm impressed with myself.
I'm posting another healthy recipe and it's still January.
Maybe those resolutions stuck?
Meh.
Not here.

But, in all seriousness, all those sweet recipes I post??  They are occasional indulgences.  Most of the time, we eat like this.
Healthful.
Flavorful.
Delicious.
And yes, occasional does mean once a week :)

Chickpea and Wild Rice Salad
Serves 4-6.
Meh.  Do we need a recipe??

Drain and rinse a can of chickpeas and put it in a large serving bowl.


Add roughly the same amount of cooked wild rice to the bowl.


Dice half a red onion and add.


Add about a head of broccoli, cut into florets, blanched, and drained.


Toss with your favorite vinaigrette...I used a classic lemon for some fresh flavor!


Season with salt and pepper and enjoy!
