mrs. simpson's classic strawberry bread + revamped brown butter strawberry bread

Okey dokey.
There were a few things that got me through my freshman year of college.
Many repeats of Friends.
Multiple pairs of pajama pants.
And Mrs. Simpson's strawberry bread.


I had (still have!) a friend, Megan, who's mama just happens to make a pretty darn tasty strawberry bread.  
And she sent it back with Megan on the weekends to get her (us) through the week.
It is delicious.


I've made it a lot since college and I started fiddling with the recipe, here and there, and came up with a new version.


So, the challenge:
make both recipes.
decide which one is tastier.
report back.

Mrs. Simpson's Classic Strawberry Bread
Makes 3 large loaves or 2 large and 2 small or lots of small loaves.
3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 1/4 cups vegetable oil
4 eggs, beaten
1 "large" package frozen strawberries, thawed (I never knew what she meant by "large", but use a big bag and add until you think the batter looks right)

Preheat your oven to 350*.  Grease and flour your pans.

Sift together dry ingredients.
Beat together eggs and oil. Add to dry with strawberries and stir to incorporate until smooth. Pour into prepared loaf pans and bake 45 minutes to 1 hour until done in middle.

Decorate with strawberry slices on top, if you'd like :)









Brown Butter Strawberry Bread
Makes the around the same as the above recipe.
2 cups flour
3/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
6 ounces butter, melted, browned and cooled
2 eggs
1 teaspoon vanilla
1/4 cup yogurt (I used plain Greek)
1 1/4 cups strawberry puree (just barely pureed, you still want some chunks)
1/2 cup diced strawberries


Preheat your oven to 350*.  Grease and flours your pans.
Mix the dry ingredients.
Beat together the brown butter, eggs, vanilla, yogurt, and strawberry puree.. Add to dry with diced strawberries and stir to incorporate until smooth. Pour into prepared loaf pans and bake 45 minutes to 1 hour until done in middle.

Decorate with strawberry slices on top, if you'd like :)
